• Wet exothermic cherry fermentation:

During fermentation, coffee cherries are soaked in water to promote the breakdown of the pulp. In wet exothermic cherry fermentation, the heat generated during fermentation is controlled at a high temperature of 28 degrees Celsius, and the fermentation time is 14 hours. The key to the method is the heat generated during fermentation, which helps to speed up the fermentation process and produce soft acidity, extremely high sweetness and body, and provide a special complex and fashionable flavor.

After removing the skin, the coffee beans and pulp are transferred to a container for a second fermentation under controlled temperature and humidity conditions.

The drying stage is controlled at a temperature below 40 degrees Celsius. This method aims to reduce the chlorogenic acid content in coffee, thereby reducing bitterness.
