WET EXOTHERMIC CHERRY FERMENTATION: Coffee cherries are soaked in water to promote the breakdown of the pulp. The heat generated during fermentation is controlled at a high temperature of 28 degrees Celsius, and the fermentation time is 14 hours. This process helps to speed up the fermentation, resulting in soft acidity, extremely high sweetness, and body, while providing a special, complex, and fashionable flavor. After removing the skin, the coffee beans and pulp are transferred to a container for a second fermentation under controlled temperature and humidity conditions. The drying stage is controlled at a temperature below 40 degrees Celsius, which aims to reduce the chlorogenic acid content in coffee, thereby reducing bitterness.
